Knights gain experience by fighting enemies participating in Quests, Raids, and PvP. When your knight levels up, he gets additional Energy, Stamina, Attack, and Luck.  Items can transform into higher tier gear through crafting changing properties and rarity. The crafting mechanism depends on stacking items and combining them. You can build up common items to a rare, epic, legendary or mythical.
